If you’ve got a garden full of zucchini and a craving for comfort food that won’t weigh you down—this Zucchini Lasagna with Béchamel White Sauce is your new go-to. It’s creamy, cheesy, and rich in Italian flavor, but without the heavy pasta layers. Plus, it’s gluten-free, and can easily be made dairy-free too!

This lasagna is a northern Italian twist—think Béchamel instead of ricotta, a lighter touch, and just enough indulgence to have you going back for seconds (or thirds… okay, I can’t help myself either).

I have no idea why I can’t just plant one—maybe two—zucchini seeds in the spring. But come July, my kitchen counter is buried under zucchini of every size. I swear I’m paying attention, but I’m convinced these things double in size overnight! Thankfully, this lasagna is one of the tastiest ways to tame the annual zucchini takeover.

Ingredients You Need for Zucchini Lasagna

  • 4 medium zucchini
  • 3 cups marinara sauce (homemade or store-bought)
  • 1 pound ground beef or turkey (optional)
  • 1 medium onion, diced
  • 2 cups Béchamel sauce – get the recipe here
  • 4 cups mozzarella cheese, grated
  • 2 cups Parmesan cheese, freshly grated
  • Fresh basil for garnish
  • Salt (for prepping zucchini)

Step-by-Step Instructions

1. Prep the Zucchini

  • Slice zucchini lengthwise into ⅛-inch slices using a mandoline or sharp knife.
  • Lay slices on paper towels and lightly salt both sides.
  • Let sit for 10–15 minutes to draw out moisture. Then blot dry with fresh towels.

2. Cook the Filling

  • In a large skillet, sauté the diced onion until soft.
  • Add ground beef or turkey (if using) and cook until browned. Drain excess fat.
  • Stir in marinara sauce and let simmer while you prep the rest.

3. Make the Béchamel Sauce

4. Assemble the Lasagna

  • Preheat oven to 375°F. Grease a 9×13″ baking dish with olive oil.
  • Spread ⅓ of the marinara across the bottom.
  • Layer with zucchini slices.
  • Spoon on ⅓ of the béchamel.
  • Sprinkle with 1 cup mozzarella and ½ cup Parmesan.
  • Repeat layers two more times, ending with the remaining cheese.

5. Bake It!

  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake another 25 minutes until bubbly and golden.
  • Let rest 15 minutes before slicing. (Trust me. It’s worth the wait.)

Storage Tips

Leftovers? Lucky you. Let the lasagna cool completely, then store in an airtight container in the fridge for 3–4 days. It also freezes beautifully—slice into portions, wrap tightly, and freeze for up to 2 months.

Heating Lasagna after Freezing

🧊 If the lasagna is frozen solid (unthawed):

  1. Preheat oven to 375°F (190°C).
  2. Unwrap the lasagna and cover it loosely with foil.
  3. Place in a baking dish (if not already in one).
  4. Bake for 60–75 minutes, or until heated through and bubbly.
  5. Remove the foil for the last 10–15 minutes to let the cheese brown up nicely.

📌 Tip: Stick a knife in the center and feel it—if it’s hot, it’s ready. If it’s still cool, give it a few more minutes.


❄️ If the lasagna is thawed in the fridge overnight:

  1. Preheat oven to 350°F (175°C).
  2. Cover with foil to keep moisture in.
  3. Bake for 30–40 minutes, or until warmed through and bubbling.

Pop it in the microwave for 3–5 minutes on medium power, covered loosely with a damp paper towel. Or reheat it in a skillet with a lid on low for a crisped bottom and evenly warmed layers.

Ingredients
  

  • 4 Medium Zucchini
  • 3 Cups Marinara
  • 1 Pound Ground Beef or Turkey Optional
  • 1 Onion – medium size Diced
  • 2 Cup Béchamel Sauce
  • 4 Cups Mozzarella Cheese Grated
  • 2 Cups Parmesan Cheese Fresh grated
  • Fresh Basil For garnish
  • 1 Teaspoon Salt For salting zucchini

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit.
  • Grease a 9×13-inch baking pan with olive oil.
  • Slice the fresh zucchini into 1/8-inch thin slices with a sharp knife or mandoline. Lay the zucchini noodles in a single layer on paper towels, lightly salt both sides, and let sit for 10-15 minutes.
  • In a large pan, sauté the diced onion until translucent.
  • If you make the lasagna with meat, add the ground beef (or turkey) and brown it. Drain any excess moisture and fat.
  • Return the ground beef and onion mixture to the pan and add your favorite homemade or store-bought marinara.  Let simmer on low.
  • Next, make the creamy Béchamel sauce.

To Assemble and Bake Zucchini Lasagna

  • Spread a layer of 1/3 marinara in greased baking pan.
  • To get the best results, dry the zucchini well with paper towels on both sides. Layer the zucchini slices over the meat sauce. 
  • Spoon 1/3 of the Béchamel sauce over the zucchini.
  • Sprinkle 1 cup of mozzarella and 1/2 cup of parmesan cheese over the Bechamel sauce.
  • Repeat the layers twice, with the remaining cheese as the final layer.
  • Cover the entire dish with aluminum foil and place into the oven.  Bake for 30 minutes. Remove the foil and bake for an additional 25 minutes.
  • Remove from the oven and let the lasagna rest for 15 minutes before serving.

Do I need to peel the zucchini?
