There’s something magical about a winter cheesecake — especially one with warm gingerbread spices baked right into the crust. This Gingerbread Cheesecake with Molasses Ginger Crust is where creamy classic cheesecake meets the cozy flavors of molasses, ginger, and cinnamon. It tastes like a December celebration wrapped in a forkful.

I originally shared this post on December 20, 2024, and updated it on December 4, 2025 with a fresh intro, helpful tips, and new FAQs to make this cheesecake even easier to bake and enjoy.

Most cheesecakes rely on a graham cracker crust, but this version leans into winter baking traditions with my homemade molasses ginger cookie dough pressed into the pan. The result? A rich, subtly spiced crust that gives you all the gingerbread vibes without overpowering the silky cheesecake filling.

This recipe has a little story behind it, too — it was the star of my sister Annette’s December birthday cake, complete with sugared cranberries, dried orange slices, and tiny star-shaped cookies. It’s festive, it’s gorgeous, and it’s the kind of dessert that gets you asked to bring “that cheesecake” every holiday season.

Cheesecake with Molasses Ginger Crust Recipe

Equipment Needed

Mixer:  Use a stand or electric hand mixer

9-inch spring-form pan

Heavy-duty aluminum foil

Roasting pan. Any larger pan that the springform pan fits into will work.  A baking sheet with high sides or even an oven-proof skillet will work.

Ingredients for the Cheesecake

Molasses Ginger Crust Ingredients

Use my molasses ginger cookies recipe – get it here.

  • Flour
  • Baking Soda
  • Spices: Ginger, Cinnamon, Cloves and Nutmeg
  • Salt
  • Dark Brown Sugar – not packed.  Try my homemade brown sugar recipe. It’s so tasty that you may never buy it at the store again.
  • Butter – Unsalted, room temperature
  • Molasses – Use light or dark, but avoid blackstrap molasses; it is too bitter for this recipe. 
  • Egg – room temperature
  • Vanilla Extract
  • White or Raw Sugar is used to roll cookie dough.

Cheesecake Batter Ingredients

  • Cream Cheese:  Cream cheese is the creamy base of all cheesecakes. Use full fat cream cheese at room temperature.
  • Granulated sugar: Sugar adds sweetness and creates the perfect harmony between sweet and tart.
  • Large Eggs: Eggs add to the creamy, rich texture. It also is the structure and stability that holds it all together.
  • Heavy Cream:  Heavy cream not only adds flavor but balances out the density of the cake.
  • Vanilla extract:  Vanilla adds a warm flavor and amazing smell.

Notes about the cheesecake decorations:

This cheesecake isn’t a quick project if you plan to make all the decorations from scratch. Luckily, I usually keep sugared cranberries and dried orange slices on hand throughout the holiday season. I make them at the start of the season and use them right through New Year to garnish cocktails, desserts, charcuterie boards, or simply for snacking. For the cake, you can top it with cookies and cookie crumbles over the whipped cream. If you prefer, fresh berries can be used as a substitute without sugaring or drying—they’ll still create a stunningly beautiful dessert!

Homemade Whipped Cream – Heavy cream, powdered sugar and vanilla

Cheesecake Instructions

To make the crust

  1. Make the crust using the molasses ginger cookie recipe. This must be done first since the dough must rest for a couple of hours in the refrigerator.
  2. After the dough has been chilled, preheat the oven to 350°F(175°C) and butter a 9-inch springform pan.
  3. Using a cookie scoop, scoop balls of the molasses ginger dough, press them into the bottom of the pan, and up the sides of the springform pan. This will take half of the dough, and when done, return the remaining dough to the refrigerator to keep chilled. The remaining dough will be used to make star-shaped cookies for decoration.
  4. Bake the crust for 15 minutes in the preheated oven and then remove from the oven to cool while making the filling.

To make the filling

  1. In a large bowl or the bowl of a stand mixer, beat the room temperature cream cheese at medium speed until smooth and creamy. Be sure to scrape down the sides of the bowl to avoid lumps.
  2. Add the granulated sugar and mix until fully combined.
  3. One at a time, add the eggs and egg yolks, mixing until combined, but do not overmix to prevent adding too much air.
  4. Add in the heavy cream and vanilla until just incorporated and the filling is smooth and uniform.
  5. Start heating the water for the water bath.
  6. Place the springform pan with the baked dough on a couple of pieces of aluminum foil laid crossway and wrap up the sides of the pan to ensure no water seeps in. Wrapping the springform pan can be done before baking the crust if preferred.
  7. Pour the cheesecake batter into the foil-wrapped pan with the cooled crust and place it into the roasting or baking pan.
  8. Transfer the roasting pan with the cheesecake into the oven. Fill the pan with one to two inches (depending on the depth of the pan) of hot water. Adding the hot water to the pan once it is in the oven makes it easier to transfer the pan into the oven.
  9. Bake for 70 minutes in the hot water bath, turn the oven off, and leave the cheesecake undisturbed in the oven for 45 minutes. Do not open the oven door.
  10. Remove the cake from the oven and let cool completely. Without removing the springform pan ring, cover the cheesecake with plastic wrap. Chill for a minimum of 4 hours or overnight.

After 4 hours or the next day:

The remaining molasses ginger cookie dough can be used to make star-shaped cookies for decorations. If the dough has been chilling for more than 2 hours, let it sit at room temperature for 30 minutes. Some of the cookies will be used to decorate the cake, and a couple will be crumbled for the topping. The rest will be sacrificed for eating. Someone has to do it!😂

Make homemade whipped cream

Place the heavy whipping cream into a cold mixing bowl.  Start beating the cream on low speed until it thickens, and then add the powdered sugar and vanilla. Beat until you have soft peaks.  Do not over whip.

Decorate the cake

  1. Carefully run a knife around the edges of the cheesecake before removing the springform pan ring.
  2. Spread the whipped cream on the top of the cheesecake.  
  3. Crumble some cookies and sprinkle the cookie crumbs over the whipped cream.
  4. Finally, add the star-shaped cookies, sugared cranberries, frosted rosemary, and dried orange slices that have been cut in half.

Serve and enjoy this beautiful cheesecake.

Tips for Cheesecake Success

  • For best results, use room-temperature ingredients: Softened cream cheese, eggs, and sour cream, which blend more easily, ensuring a smooth filling.
  • Don’t Overmix: Overmixing introduces air into the batter, which can cause the cheesecake to puff up and crack as it cools.
  • Avoid Overbaking: Remember that the cheesecake will continue to cook as it cools in the oven. 
  • Do not open the oven door while cooling.

    • 4 Eggs Whole
    • 1 Egg Yolks
    • 1/2 Cup Heavy Cream
    • 2 Teaspoons Pure Vanilla Extract
    • Molasses Ginger Cookie Dough Mixture See My post Chewy Molasses Ginger Cookies for ingredients & instructions
    • 1 Cup Heavy Cream For Whipped Cream Topping
    • 2 Teaspoons Powdered Sugar For Whipped Cream Topping
    • 1/2 Teaspoon Pure Vanilla Extract For Whipped Cream Topping

    Molasses Ginger Cookie Dough Crust Instructions

    • Make the crust using the molasses ginger cookie recipe.-see my recipe post Chewy Molasses Ginger Cookies. This must be done first since the dough must rest for a couple of hours in the refrigerator.
    • After the dough has been chilled, preheat the oven to 350°F(175°C) and butter a 9-inch springform pan.

    Can I make this cheesecake ahead of time?

    Yes — in fact, it tastes even better the next day. This cheesecake can be made 24–48 hours ahead and stored in the refrigerator until serving. Add the whipped cream and decorations just before serving for the prettiest results.

    Can I freeze this cheesecake?

    Absolutely. After chilling overnight, remove the springform ring and wrap the cheesecake tightly in plastic wrap, then foil. Freeze up to 2 months. Thaw overnight in the refrigerator before adding toppings.

    How do I prevent cracks in the cheesecake?

    Room-temperature ingredients, gentle mixing, a water bath, and not opening the oven door during cooling are the secrets. Even if a little crack happens — whipped cream hides everything.

    Can I use store-bought ginger cookies for the crust?

    Yes — if you don’t have homemade molasses ginger cookie dough ready, you can use crushed store-bought gingersnaps mixed with melted butter. But for the best flavor and that true gingerbread warmth, I highly recommend making my Chewy Molasses Ginger Cookies — they’re what give this crust its incredible depth and spice.

    Can I skip the sugared cranberries and dried oranges?

    Of course. Fresh berries, simple cookie crumbles, or even just whipped cream make beautiful alternatives. The decorations are optional — deliciousness is not.

    Is it safe to use pine needles for decoration?

    Some pine varieties are edible, but unless you’re confident in plant ID, stick to rosemary sprigs for the same frosted, wintry look. No judgment from me — I’m not nibbling pine needles either.

    How do I get clean cheesecake slices?

    Wipe your knife with hot water between each cut. It feels tedious but gives bakery-level slices.
